An essential part of chicken pastries and lasagne dishes. This helps transform those winter warming dishes into something decadent and luxurious.
Ingredients
- 100g butter
- 6 Tablespoons of plain flour
- 4 cups of milk
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of nutmeg
- 250g of grated cheese
- 2 Tablespoons of grated cheese

Method
1.) Melt the butter in a saucepan.
2.) Remove from heat and stir in flour using a wooden spoon.
3.) Add the milk gradually, stirring all the time.
4.) Return to heat, constantly stirring until sauce boils and mixture thickens.
5.) Season with salt, pepper and nutmeg.
6.) Add cheeses, stir until all of the cheeses have melted.
NOTE: This quantity is enough white sauce to make a decent size lasagne and a decent amount of chicken pastry.
TIP: Don’t be impatient and turn the temperature up too high or forget to stir. It doesn’t take long for this to burn if you don’t lovingly nurture it.
